1 cup quinoa, rinsed

2 cups vegetable or chicken broth

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

Juice of 1 lime

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

Optional toppings: Lime wedges, sliced jalapeños, feta cheese, or sour cream

Instructions
 

Cook the Quinoa: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa has absorbed all the liquid. Once cooked, fluff with a fork and set aside.

    Marinate the Chicken: In a bowl, combine olive oil, lime juice, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Add the chicken breasts and coat thoroughly. Marinate for at least 30 minutes (or up to 4 hours if you have the time).

      Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

        Combine the Bowl: In a large bowl, mix together the cooked quinoa, black beans, corn, cherry tomatoes, diced avocado, and fresh cilantro. Season with salt and pepper to taste.

          Assemble and Serve: Divide the quinoa mixture into bowls, top with the sliced grilled chicken, and sprinkle any optional toppings of your choice. Serve warm with lime wedges on the side for an extra zing!
