1 tablespoon sesame oil

Salt and pepper to taste

For the Teriyaki Sauce:

1/2 cup soy sauce

1/4 cup water

1/4 cup brown sugar

2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground ginger

For Assembling the Bowls:

2 cups cooked jasmine or brown rice

1 cup broccoli florets

1 red bell pepper, thinly sliced

1 cup snap peas

2 green onions, finely chopped

Sesame seeds, for garnish

Add the chicken thighs to the marinade, making sure they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for better flavor).

    Prepare the Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, water, brown sugar, sesame oil, garlic powder, and ground ginger. Bring to a simmer, stirring occasionally until the sugar dissolves. Slowly whisk in the cornstarch slurry and allow the sauce to thicken for about 2-3 minutes. Remove from heat and set aside.
