1 lb (450g) large shrimp, peeled and deveined

2 cups mixed vegetables (bell peppers, snap peas, and carrots)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch diluted in 2 tablespoons water

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Ingredients: Rinse and pat dry the shrimp. Chop vegetables into bite-sized pieces. Mince garlic and ginger, and set them aside.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Shrimp: Add the shrimp to the pan in a single layer. Cook for about 2-3 minutes on one side until pink and opaque. Stir and cook for an additional minute. Remove the shrimp from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add garlic and ginger. Stir-fry for about 30 seconds until fragrant.

          Add Vegetables: Toss in the mixed vegetables and stir-fry for about 3-4 minutes until they are vibrant and slightly tender.

            Combine Everything: Return the shrimp to the skillet. Pour in the soy sauce, oyster sauce (if using), rice vinegar, and sesame oil. Stir well to coat all ingredients.

              Thicken the Sauce: Add the cornstarch mixture to the skillet, stirring quickly to thicken the sauce. Cook for an additional 1-2 minutes until everything is well combined and heated through.

                Garnish & Serve: Remove from heat, sprinkle with chopped green onions and sesame seeds. Serve immediately over cooked rice or noodles.
