Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 lb ground turkey

1 cup fresh spinach, chopped

1 cup cooked quinoa or rice

1 small onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tsp Italian seasoning

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush or spray the outsides and insides with olive oil. Place them upright in a baking dish.

      Cook the Filling: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Brown the Turkey: Add the ground turkey to the onion mixture, breaking it apart with a spatula. Cook for about 5-7 minutes or until browned and fully cooked through.

          Add Spinach & Seasoning: Mix in the chopped spinach, cooked quinoa (or rice), diced tomatoes, Italian seasoning, paprika, salt, and black pepper. Stir everything together and let it cook for another 2-3 minutes until the spinach is wilted and heated through.

            Stuff the Peppers: Carefully spoon the turkey and spinach mixture into each bell pepper, packing it in gently but firmly. Top each stuffed pepper with shredded mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                Serve: Remove the stuffed peppers from the oven and let them cool for a couple of minutes. Garnish with fresh basil if desired and serve warm.
