4 medium sweet potatoes

1 pound ground turkey

2 cups fresh broccoli florets, chopped

1 small onion, finely diced

2 garlic cloves, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheddar cheese (optional)

2 tablespoons olive oil

2 tablespoons Greek yogurt or sour cream (for serving)

Fresh chives, chopped (for garnish)

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly, prick them with a fork, and place them on a baking sheet. Bake for 45-60 minutes, until tender when pierced with a fork.

    Cook the Turkey: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.

      Add Turkey and Spices: Increase the heat to medium-high, then add the ground turkey to the skillet. Cook for 6-8 minutes, breaking it apart with a spatula. Once browned, season with smoked paprika, cumin, salt, and black pepper.

        Stir in Broccoli: Once the turkey is fully cooked, add the chopped broccoli florets. Mix well and cover the skillet, allowing the broccoli to steam for about 5-7 minutes until bright green and tender.

          Assemble the Stuffed Potatoes: When the sweet potatoes are done, remove them from the oven and let them cool slightly. Carefully cut them in half lengthwise and scoop out a small amount of flesh to create space for the filling.

            Fill the Sweet Potatoes: Spoon the turkey and broccoli mixture into each sweet potato half. If using cheddar cheese, sprinkle it generously on top of the filled sweet potatoes.

              Final Bake (optional): Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
