4 large eggs

1/4 cup milk

1 cup shredded sharp cheddar cheese

1/2 cup cooked and crumbled breakfast sausage (or diced vegetables for a vegetarian option)

4 large flour tortillas (10-inch)

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons fresh chives, chopped (optional)

2 tablespoons olive oil or butter for cooking

Instructions
 

Prepare the Filling: In a large bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper until well combined. Stir in the cheese, crumbled sausage (or vegetables), and chives if using.

    Cook the Egg Mixture: Heat 1 tablespoon of olive oil or butter in a large non-stick skillet over medium heat. Pour the egg mixture into the skillet. Stir gently with a spatula, cooking for about 3-5 minutes until the eggs are just set but still slightly creamy. Remove from heat.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a generous scoop of the egg and cheese filling in the center of the tortilla. Fold in the sides and roll the wrap tightly from the bottom to the top, ensuring the filling doesn’t escape.

        Toast the Wraps: In the same skillet, add a bit more olive oil or butter if needed, and place the wraps seam side down. Cook for about 2-3 minutes on each side until the tortilla is golden brown and crispy.

          Slice and Serve: Remove the wraps from the skillet and let them cool for a minute. Slice in half and serve warm, perhaps with salsa or hot sauce on the side.
