Savory Chicken & Rice Soup

1 lb boneless, skinless chicken thighs

1 cup long-grain white rice

4 cups chicken broth

2 cups water

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 tsp dried thyme

1 tsp dried rosemary

½ tsp black pepper

1 tsp salt (adjust to taste)

2 tablespoons olive oil

1 cup fresh spinach, chopped

1 lemon, juiced

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a large pot, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add them to the pot, browning on both sides for about 4-5 minutes. Remove the chicken from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften. Add the minced garlic and cook for another minute until fragrant.

      Simmer the Soup: Return the chicken thighs to the pot. Add the chicken broth, water, thyme, rosemary, and the remaining salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 20-25 minutes.

        Cook the Rice: After simmering, remove the chicken and set it aside again. Stir in the rice, cover the pot, and simmer for an additional 15-20 minutes, or until the rice is tender.

          Shred the Chicken: While the rice is cooking, shred the chicken thighs using two forks. Once the rice is done, return the shredded chicken to the pot and mix well.

            Add Spinach and Lemon: Stir in the chopped spinach and lemon juice, allowing them to wilt and combine with the soup, cooking for another 2-3 minutes. Taste and adjust seasoning if necessary.

              Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy your hearty chicken and rice soup with crusty bread on the side!
