4 boneless, skinless chicken breasts (about 1.5 lbs)

Salt and pepper, to taste

1/2 cup all-purpose flour, for dredging

2 tablespoons olive oil

2 tablespoons unsalted butter

8 oz cremini or button mushrooms, sliced

3 cloves garlic, minced

1 cup Marsala wine

1 cup low-sodium chicken broth

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts liberally with salt and pepper on both sides. Dredge each piece in flour, shaking off any excess.

    Cook the Chicken: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the chicken breasts in a single layer (you may need to do this in batches). Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Mushrooms: In the same skillet, add the remaining tablespoon of butter. Add the sliced mushrooms and cook, stirring occasionally, for about 5-7 minutes until they are browned and tender. Add minced garlic and cook for an additional minute, until fragrant.

        Make the Sauce: Pour in the Marsala wine and scrape the bottom of the skillet to release any browned bits. Bring to a boil and let it simmer for about 2 minutes. Then, add the chicken broth and thyme, stirring well. Allow the sauce to simmer for another 5 minutes until slightly reduced.

          Combine: Return the cooked chicken to the skillet, nestling it in the sauce. Cook for an additional 5 minutes to heat through and allow the chicken to absorb some flavors.

            Garnish and Serve: Remove the skillet from the heat. Garnish with fresh parsley before serving. This dish is great served over pasta, rice, or even creamy polenta to soak up the delicious sauce.
