2 cups cooked rice (white or brown)

1 pound boneless, skinless chicken breasts, cubed

1 medium onion, diced

3 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and cook until browned and cooked through, about 7-10 minutes. Season with salt and pepper, then remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, cooked chicken, frozen mixed vegetables, cream of mushroom soup, chicken broth, thyme, oregano, and additional salt and pepper as needed. Mix well until everything is evenly incorporated.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

            Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top. If using, add breadcrumbs for an extra crunchy topping.

              Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until heated through and the cheese is bubbly and golden.
