Ingredients

12 oz fettuccine pasta

2 cups broccoli florets

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes for a kick

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot. Once done, reserve ½ cup of pasta water, then drain the pasta and broccoli together. Set aside.

Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt, black pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, or until fragrant, being careful not to burn it. Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese, allowing it to melt and create a creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Combine Everything: Add the cooked pasta, broccoli, and chicken back into the skillet with the Alfredo sauce. Toss everything together gently until well-coated. Let it cook for an additional 2-3 minutes over low heat to warm through.

Serve: Divide the creamy chicken Alfredo pasta among plates. Garnish with freshly chopped parsley and a sprinkle of red pepper flakes, if desired. Enjoy!
