4 large bell peppers (any color)

1 pound ground beef (or substitute with ground turkey for a lighter option)

1 cup cooked rice (white, brown, or quinoa)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 cup corn (frozen or fresh)

1 cup black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar, mozzarella, or a blend)

Fresh parsley or cilantro for garnish (optional)

Olive oil for sautéing

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

    Cook the Beef Mixture: In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chopped onion and garlic, sautéing until fragrant and the onion is translucent (about 2-3 minutes).

      Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes), then drain any excess fat.

        Mix the Filling: Stir in the diced tomatoes, cooked rice, corn, black beans, cumin, smoked paprika, salt, and pepper. Cook the mixture for an additional 5 minutes until heated through, allowing the flavors to meld together.

          Stuff the Peppers: Carefully spoon the beef and vegetable mixture into each bell pepper, packing them tightly. Top each filled pepper with shredded cheese.

            Bake the Peppers: Pour a small amount of water (about 1/4 cup) into the bottom of the baking dish to create steam. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley or cilantro, if desired, and serve warm.
