Sausage & Pepper Skillet Pasta

8 oz (225g) penne pasta

2 tablespoons olive oil

1 pound (450g) Italian sausage (sweet or spicy), casings removed

1 medium onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

1 can (14.5 oz) diced tomatoes, drained

½ cup chicken or vegetable broth

Salt and pepper, to taste

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Sausage: In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.

      Add Vegetables: Add the sliced onion and bell peppers to the skillet. Sauté until the vegetables are tender, about 4-5 minutes. Stir in the minced garlic, oregano, and crushed red pepper flakes, cooking for an additional minute until fragrant.

        Combine Ingredients: Stir in the drained diced tomatoes and chicken or vegetable broth. Let the mixture simmer for about 5 minutes to meld the flavors together. Season with salt and pepper to taste.

          Combine with Pasta: Add the cooked penne pasta to the skillet, tossing everything together until the pasta is well coated with the sauce and heated through.

            Serve: Remove from heat and sprinkle with grated Parmesan cheese. Toss gently one more time. Garnish with fresh basil leaves before serving.
