Roasted Garlic Mashed Cauliflower

1 large head of cauliflower, chopped into florets

1 whole bulb of garlic

2 tablespoons olive oil

1/4 cup unsweetened almond milk (or any milk of choice)

3 tablespoons unsalted butter (or vegan butter for a dairy-free option)

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

A pinch of nutmeg (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the whole bulb of garlic (just enough to expose the cloves) and drizzle with 1 tablespoon of olive oil. Wrap it in aluminum foil and place it in the oven. Roast for about 30-35 minutes, or until garlic is golden and soft.

    Prepare the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the chopped cauliflower florets and cook for about 10-12 minutes until they are tender and easily pierced with a fork.

      Drain and Dry: Once the cauliflower is cooked, drain it well and let it sit in the colander for a couple of minutes to allow excess moisture to evaporate.

        Blend: In a food processor or with an immersion blender, combine the drained cauliflower, roasted garlic cloves (squeezed out of their skins), almond milk, butter, remaining tablespoon of olive oil, salt, pepper, and nutmeg if using. Blend until smooth and creamy, scraping down the sides as necessary.

          Taste and Adjust: Taste the mixture and adjust seasoning with additional salt, pepper, or garlic according to preference.
