Quick Turkey Taco Pasta Bake

12 oz penne pasta

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade equivalent)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup salsa

½ cup sour cream

2 green onions, chopped (for garnish)

Fresh cilantro, chopped (for garnish, optional)

Salt and pepper to taste

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Turkey and Onions: In a large skillet over medium heat, add the ground turkey. Cook for about 5 minutes, breaking it apart until browned. Add the diced onions and minced garlic, cooking for another 3-4 minutes until the onions are soft.

      Combine Ingredients: Stir in the black beans, corn, diced tomatoes (with their juices), taco seasoning, cooked pasta, salsa, and sour cream. Mix well until everything is well combined and heated through. Season with salt and pepper to taste.

        Layer the Bake: Preheat your oven to 350°F (175°C). Pour half of the turkey taco pasta mixture into a greased 9x13 inch baking dish. Sprinkle half of the shredded cheddar and Monterey Jack cheese on top. Add the remaining pasta mixture, then top with the remaining cheese.

          Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
