Quick Shrimp Tacos with Avocado Cream

For the Shrimp:

1 lb shrimp, peeled and deveined

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

Juice of 1 lime

For the Avocado Cream:

1 ripe avocado

1/2 cup sour cream (or Greek yogurt for a healthier option)

Juice of 1 lime

1 small garlic clove, minced

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

1/2 cup red cabbage, shredded

1/2 cup fresh cilantro, chopped

1 small red onion, finely diced

1 lime, cut into wedges

Instructions
 

Prepare the Avocado Cream: In a blender or food processor, combine the ripe avocado, sour cream, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning if necessary, then set aside.

    Season the Shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, pepper, and lime juice. Make sure the shrimp are well-coated in the spices.

      Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the seasoned shrimp in a single layer. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat.

        Warm the Tortillas: In the same skillet, briefly warm the tortillas for about 30 seconds on each side until pliable. You can also warm them in a microwave, wrapped in a damp paper towel for about 15 seconds.

          Assemble the Tacos: Place a few shrimp on each tortilla. Top with shredded red cabbage, diced red onion, and fresh cilantro. Drizzle with the avocado cream.
