Ingredients
  

1 cup canned pumpkin puree

1 cup cooked chickpeas (drained and rinsed)

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1 tsp pumpkin spice mix

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil (for brushing)

Optional: Greek yogurt or tahini for dipping

Instructions
 

In a large bowl, mix together the canned pumpkin puree, cooked chickpeas, breadcrumbs, chopped parsley, and minced garlic.

    Incorporate the ground cumin, ground coriander, pumpkin spice mix, salt, and black pepper into the bowl. Stir thoroughly until the mixture is well incorporated. If needed, use a potato masher or fork to gently mash the chickpeas for improved texture.

      Preheat the air fryer to 375°F (190°C) for approximately 5 minutes.

        Once you have blended the ingredients, shape the mixture into small balls or patties, about 1-2 inches in diameter, using your hands.

          Lightly coat each falafel bite with olive oil on all sides.

            Arrange the falafel bites in the basket of the air fryer, ensuring they are not crowded. It might be necessary to cook them in several batches.

              Air fry the falafel bites for around 10-12 minutes, turning them halfway through, until they achieve a golden brown and crispy exterior.

                After cooking, take the falafel bites out of the air fryer and allow them to cool for a minute prior to serving.

                  Serve warm with your choice of dipping sauce such as Greek yogurt or tahini, and enjoy your delightful pumpkin spice falafel!
