Quick Creamy Tomato Basil Chicken Bowls

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 teaspoon Italian seasoning

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped

2 cups cooked rice (or your preferred grain) for serving

Extra fresh basil for garnish

Red pepper flakes (optional, for spice)

Instructions
 

Prep the Chicken: Season both chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.

      Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

        Create the Sauce: Pour in the diced tomatoes with their juices and sprinkle in the Italian seasoning. Stir well and bring to a simmer. Let it cook for about 2-3 minutes.

          Add Cream & Cheese: Reduce the heat to medium-low and stir in the heavy cream and Parmesan cheese until smooth and creamy. Allow the sauce to simmer for an additional 2-3 minutes. If you'd like some kick, add red pepper flakes to taste.

            Combine Chicken & Sauce: Return the chicken to the skillet, spooning the creamy tomato sauce over the top. Allow it to cook together for another minute or two, letting the flavors meld. Stir in the fresh basil just before serving.

              Serve: In serving bowls, place a scoop of cooked rice or your grain of choice. Top with the creamy tomato basil chicken and an extra sprinkle of fresh basil for garnish.
