Quick Chicken Fajita Lettuce Wraps

1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 head of romaine lettuce (or butter lettuce), separated into leaves

Optional toppings: diced avocado, salsa, shredded cheese, and sour cream

Instructions
 

Prepare the Chicken: In a bowl, combine the chicken strips with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Mix well to coat the chicken evenly with the spices.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Add the Vegetables: Once the chicken is cooked, add the sliced red and green bell peppers, as well as the red onion to the skillet. Sauté for an additional 3-4 minutes, until the vegetables are tender but still crisp.

        Finish with Flavor: Squeeze the juice of one lime over the chicken and vegetable mixture, then stir in the fresh cilantro. Remove from heat.
