1 lb ground beef (80/20 blend for flavor)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

2 tbsp chili powder (adjust for spice level)

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1-2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Shredded cheese (optional, for serving)

Sour cream (optional, for serving)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat 1-2 tablespoons of olive oil over medium-high heat.

    Brown the Beef: Add the ground beef to the pot and cook until browned, about 5 minutes. Use a spatula to break it apart as it cooks.

      Sauté Aromatics: Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onions are translucent and fragrant.

        Season: Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional minute to toast the spices.

          Combine Beans and Tomatoes: Add the drained kidney beans, black beans, and diced tomatoes (with their juices) to the pot. Stir well to mix all ingredients together.

            Simmer: Bring the mixture to a simmer, then reduce the heat to low. Let it cook for about 10-12 minutes, stirring occasionally. If you prefer a thicker chili, let it simmer longer.

              Taste and Adjust: Sample the chili and adjust seasoning as needed. Add more chili powder if you like it spicier!

                Serve: Spoon the chili into bowls and garnish with fresh cilantro. Top with shredded cheese and a dollop of sour cream if desired.
