Quick Beef and Bean Chili for Families

Ingredients
  

1 lb ground beef

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, with juice

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), chopped

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

2 cups beef broth

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat 2 tbsp of olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the pot. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Add the Spices: Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir well to coat the meat and vegetables with the spices; let it cook for about 1-2 minutes to develop the flavors.

        Incorporate the Beans and Tomatoes: Add the drained kidney beans, black beans, and diced tomatoes (with their juice) to the pot. Stir to combine all the ingredients.

          Simmer the Chili: Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let the chili cook for about 20-25 minutes, stirring occasionally. This allows the flavors to meld together.

            Taste & Adjust: After simmering, taste the chili and adjust seasoning with additional salt, pepper, or spices if desired.
