2 salmon fillets (6 oz each)

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 tablespoon honey

2 cloves garlic, minced

Salt and pepper, to taste

Fresh dill or parsley for garnish (optional)

For the Sweet Potato Mash:

2 medium sweet potatoes, peeled and diced

2 tablespoons unsalted butter

1/4 cup milk (or more for desired consistency)

1/2 teaspoon cinnamon (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Salmon: In a small bowl, whisk together the olive oil, Dijon mustard, honey, minced garlic, salt, and pepper. Place the salmon fillets on a lined baking sheet, skin-side down. Brush the mixture generously over the top of the salmon fillets.

      Bake the Salmon: Place the salmon in the preheated oven and bake for about 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

        Cook the Sweet Potatoes: While the salmon is baking, bring a pot of salted water to a boil. Add the diced sweet potatoes and cook until tender, about 15-20 minutes. Drain and return them to the pot.

          Mash the Sweet Potatoes: Add the butter, milk, cinnamon (if using), salt, and pepper to the cooked sweet potatoes. Mash until smooth and creamy. Adjust the milk for desired consistency.
