1 lb (450 g) tender beef sirloin, thinly sliced

2 cups egg noodles

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

8 oz (225 g) cremini mushrooms, sliced

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 cup beef broth

1 cup sour cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef sirloin and season with salt and pepper. Sear for about 3-4 minutes until browned but not completely cooked through. Remove the beef from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for another 4-5 minutes until the mushrooms are browned and have released their moisture.

        Build the Sauce: Stir in the Dijon mustard, Worcestershire sauce, and beef broth. Bring to a gentle simmer, scraping the bottom of the skillet to incorporate any flavorful bits stuck to the pan. Let it simmer for about 5 minutes.
