1 cup rolled oats

1/2 cup pumpkin puree

1/4 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin spice (or a mix of cinnamon, nutmeg, and ginger)

1/4 teaspoon salt

1/4 cup chia seeds (optional for added nutrition)

1/4 cup mini chocolate chips or chopped nuts (optional)

Instructions
 

In a medium mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Stir until well combined.

    Add the pumpkin spice, salt, and chia seeds to the mixture, and continue to mix until everything is evenly distributed.

      If using, fold in the mini chocolate chips or chopped nuts for an extra crunch in your energy bites.

        Once the mixture is fully combined, use your hands to form small balls (about 1 inch in diameter) from the mixture. If the mixture is too sticky, dampen your hands slightly with water to help form the bites.

          Place the energy bites on a parchment-lined baking sheet or plate.

            Refrigerate the energy bites for at least 30 minutes to firm up.

              Once set, enjoy your pumpkin spice energy bites right away, or transfer them into an airtight container. They can be stored in the refrigerator for up to a week.
