Ingredients

For the Cupcakes:

1 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon ground cloves

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil

2 large eggs

1 cup canned pumpkin puree

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Optional: 1 teaspoon ground cinnamon for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard muffin tin with cupcake liners.

Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined. Set aside.

Mix Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well incorporated. Add the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree and vanilla extract until smooth.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay!

Fill Cupcake Liners: Scoop the batter into the prepared muffin tin, filling each cupcake liner about two-thirds full. This should yield about 12 cupcakes.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and allow to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Make the Cream Cheese Frosting: In a medium bowl, beat together the softened cream cheese and butter until creamy and smooth using an electric mixer. Gradually add in the powdered sugar and mix until well combined. Stir in the vanilla extract and a pinch of salt. If desired, mix in the ground cinnamon for extra flavor.

Frost the Cupcakes: Once the cupcakes are completely cool, use a piping bag or a knife to frost each cupcake generously with the cream cheese frosting.

Optional Garnish: For an added touch, dust the tops with a little ground cinnamon.

Serve and Enjoy: Your Pumpkin Spice Cupcakes with Cream Cheese Frosting are ready to be enjoyed! Perfect for gatherings or a cozy autumn treat.
