Pulled BBQ Chicken Flatbreads

2 cups shredded cooked chicken (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

4 large flatbreads or pita breads

1 cup shredded mozzarella cheese

1 small red onion, thinly sliced

1 cup corn kernels (fresh, frozen, or canned)

1 small jalapeño, thinly sliced (optional for heat)

1/2 cup fresh cilantro leaves, chopped (for garnish)

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Olive oil for brushing

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: In a medium bowl, combine the shredded chicken with the BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Mix until well-coated.

      Assemble the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil. Spread an even layer of the BBQ chicken mixture onto each flatbread.

        Add Toppings: Evenly distribute the corn kernels, sliced red onion, jalapeño (if using), and shredded mozzarella cheese over the chicken on each flatbread.
