1 cup fresh spinach, chopped

1/4 cup feta cheese, crumbled

1 tablespoon olive oil

2 tablespoons milk (optional)

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt

Fresh herbs (like dill or parsley) for garnish (optional)

Instructions
 

Whisk the Eggs: In a medium bowl, crack the eggs and add milk (if using), garlic powder, salt, and black pepper. Whisk until well combined and the mixture is slightly frothy.

    Prepare the Spinach: In a non-stick skillet, heat the olive oil over medium heat. Once hot, add the chopped spinach and sauté for about 2 minutes until wilted.

      Add the Eggs: Pour the egg mixture over the wilted spinach in the skillet. Gently stir to distribute the spinach evenly. Allow the eggs to cook undisturbed for about 2-3 minutes, or until the edges start to set.

        Add Feta: Sprinkle the crumbled feta cheese evenly over one half of the omelet. Cover the skillet with a lid and cook for an additional 2-3 minutes until the top is set and the cheese starts to melt.

          Fold and Serve: Carefully lift the other half of the omelet over the feta side to create a half-moon shape. Slide the omelet onto a plate and garnish with fresh herbs if desired. Serve immediately.
