Ingredients

4 large eggs

1/2 cup egg whites

1 cup spinach, roughly chopped

1/2 cup bell peppers, diced (any color)

1/4 cup red onion, finely chopped

1/2 cup cherry tomatoes, halved

1/4 cup shredded low-fat cheese (cheddar or mozzarella)

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 whole wheat tortillas

Optional toppings: avocado slices, salsa, hot sauce

Instructions

Prep the Veggies: Start by gathering and preparing all your vegetables. Dice the bell peppers, chop the spinach, and halve the cherry tomatoes. Set aside.

Cook the Veggies: In a large non-stick skillet, heat the olive oil over medium heat. Add the red onion and sauté for about 2 minutes until it becomes translucent. Add the bell peppers and cook for an additional 2 minutes. Finally, stir in the spinach and cherry tomatoes, cooking until the spinach wilts, about 1-2 minutes.

Whisk the Eggs: In a medium bowl, crack the large eggs and add the egg whites. Whisk until well combined, then season with garlic powder, smoked paprika, salt, and pepper.

Scramble the Eggs: Pour the egg mixture over the cooked vegetables in the skillet. Gently stir to combine, cooking on medium heat until the eggs are fully set, about 3-4 minutes. Avoid overcooking to keep them fluffy!

Assemble the Wraps: Lay out your tortillas on a clean surface. Evenly divide the egg and veggie mixture among the tortillas. Sprinkle the shredded cheese over each portion.

Wrap It Up: Fold in the sides of each tortilla, then roll it up from the bottom to enclose the filling. You can lightly toast the wraps in the skillet, seam-side down, for 1-2 minutes to seal and give them a crispy texture.

Serve: Cut the wraps in half on a diagonal and serve warm. Add optional toppings like avocado slices, salsa, or a drizzle of hot sauce for extra flavor.
