One-Pan Lemon Garlic Shrimp and Broccoli

1 lb large shrimp, peeled and deveined

4 cups broccoli florets

3 tablespoons olive oil

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon red pepper flakes (adjust according to spice preference)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: 1 cup cooked rice or quinoa (to serve)

Instructions
 

Prepare the Shrimp: Pat the shrimp dry with paper towels. In a bowl, toss the shrimp with olive oil, garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper. Let it marinate for about 15 minutes.

    Cook the Broccoli: In a large skillet or sauté pan over medium heat, add 1 tablespoon of olive oil. Once hot, add the broccoli florets and a pinch of salt. Sauté for about 4-5 minutes, until they are bright green and tender-crisp. Remove the broccoli from the pan and set aside.

      Cook the Shrimp: In the same pan, add the remaining 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the marinated shrimp in a single layer, cooking for about 2-3 minutes on each side until they are pink and opaque.

        Combine: Add the broccoli back into the pan with the shrimp. Toss everything together and cook for another minute to heat through.

          Serve: Remove from heat, garnish with fresh parsley, and serve immediately. If desired, spoon the shrimp and broccoli mixture over cooked rice or quinoa for a complete meal.
