12 oz (340g) pasta (penne or fusilli works well)

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Chicken: In a large skillet or pan over medium heat, add the olive oil. Once hot, add the diced chicken and season with salt and pepper. Cook the chicken for about 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

    Sauté Garlic: In the same pan, add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.

      Add Pasta: Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer, then add the pasta. Stir to combine and bring to a boil. Reduce heat to low and cover. Cook, stirring occasionally, for about 10-12 minutes or until the pasta is al dente.

        Combine Ingredients: Once the pasta is cooked, add the cooked chicken back into the pan along with the basil pesto, cherry tomatoes, and spinach. Stir well to combine and cook for an additional 2-3 minutes until the spinach is wilted and everything is heated through.
