One-Pan Creamy Chicken and Spinach Skillet

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, and thyme mix)

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

4 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

Salt and pepper, to taste

1 tablespoon lemon juice (optional)

Fresh parsley, for garnish (optional)

Instructions
 

Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the chicken pieces with salt and pepper. Once the oil is hot, add the chicken to the skillet in a single layer. Sear for about 5-6 minutes until browned, stirring occasionally. Remove the chicken from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the diced onion. Sauté for about 3-4 minutes, or until the onions become translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Build the Sauce: Sprinkle the dried Italian herbs over the onions and garlic. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the skillet. Allow to cook for about 2-3 minutes.

        Add Cream and Spinach: Reduce the heat to medium-low and stir in the heavy cream. Once combined, add the chopped spinach and cherry tomatoes. Cook for another 2-3 minutes until the spinach is wilted.

          Combine and Simmer: Return the seared chicken to the skillet. Add the grated Parmesan cheese and stir everything together. Allow it to simmer for about 5 minutes until the chicken is cooked through and the sauce has thickened slightly. Season with more salt and pepper to taste, and stir in lemon juice if using.

            Serve: Garnish with freshly chopped parsley before serving. This dish is perfect on its own or served over rice, pasta, or with crusty bread.
