1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup cooked quinoa (or rice for a different texture)

1 cup sharp cheddar cheese, shredded

1 cup cream of chicken soup (or homemade)

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon olive oil

½ cup panko breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large oven-safe skillet or baking dish, heat olive oil over medium heat. Add the chicken pieces, sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Sauté the chicken for about 5-6 minutes or until lightly browned (it doesn’t need to be cooked through).

      Prepare Broccoli: If using fresh broccoli, add the florets to the skillet with the chicken and cook for an additional 2-3 minutes until slightly tender. If using frozen broccoli, you can add it directly to the next step without sautéing.

        Mix Ingredients: Add cooked quinoa and cream of chicken soup to the skillet, stirring to combine all the ingredients thoroughly. Gradually pour in the chicken broth, ensuring everything is well incorporated.

          Add Cheese: Stir in ¾ cup of the shredded cheddar cheese, saving the remaining cheese for topping.

            Top with Breadcrumbs: Evenly spread the panko breadcrumbs over the mixture in the skillet. Then, sprinkle the reserved cheddar cheese on top.

              Bake: Place the skillet in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden brown, and the chicken is cooked through.
