1 lb (450g) ground beef

1 cup long-grain white rice, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes with green chilies (drained)

2 cups beef broth (or stock)

1 cup shredded cheddar cheese (plus extra for topping)

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 cup frozen peas and carrots (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large skillet or frying pan over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.

    Sauté Vegetables: Add the diced onion, minced garlic, and bell pepper to the skillet. Sauté until the vegetables are softened, about 3-4 minutes.

      Combine Ingredients: Stir in the rinsed rice, diced tomatoes with green chilies, beef broth, smoked paprika, oregano, salt, and black pepper. Mix well to combine all ingredients.

        Simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. If using frozen peas and carrots, add them in the last 5 minutes of cooking.

          Add Cheese: Once the rice is cooked, stir in the shredded cheddar cheese until melted and gooey. Taste and adjust seasoning if needed.

            Topping and Serving: If desired, sprinkle additional cheese on top and cover the pan for a minute to let it melt. Garnish with chopped parsley before serving.
