Ingredients

2 medium sweet potatoes, peeled and cubed

2 cups Brussels sprouts, trimmed and halved

1 medium butternut squash, peeled and cubed

1 large red onion, sliced into wedges

2 apples (preferably a tart variety like Granny Smith), cored and sliced

1/4 cup olive oil

1/4 cup pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon cinnamon

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup pecans, roughly chopped (optional)

Fresh thyme leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Vegetables: In a large mixing bowl, combine the cubed sweet potatoes, halved Brussels sprouts, cubed butternut squash, and red onion wedges. Toss well to combine.

Make the Glaze: In a separate bowl, whisk together the olive oil, maple syrup, balsamic vinegar, cinnamon, salt, and black pepper until well blended.

Combine and Toss: Pour the maple glaze over the vegetable mixture. Toss until all the vegetables are evenly coated.

Spread on Baking Sheet: Transfer the glazed vegetables onto the prepared baking sheet, spreading them out in a single layer to ensure even roasting.

Add Apples and Pecans: Scatter the apple slices and chopped pecans (if using) over the top of the vegetable mix.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for 25-30 minutes. Halfway through the cooking process, give the vegetables a gentle stir to promote even browning.

Check for Doneness: The vegetables should be tender and caramelized. If necessary, you can roast them for an additional 5-10 minutes.

Garnish and Serve: Once roasted, remove the medley from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves if desired, and serve warm as a delicious side dish!
