Maple Pecan Pie Cheesecake Bars

For the crust:

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup brown sugar

1/4 teaspoon salt

For the cheesecake layer:

16 oz (2 packages) cream cheese, softened

1/2 cup granulated sugar

1/4 cup maple syrup

1 teaspoon vanilla extract

2 large eggs

For the pecan pie topping:

1 1/2 cups pecans, roughly chopped

1/2 cup corn syrup

1/4 cup maple syrup

1/4 cup brown sugar

4 tablespoons unsalted butter, melted

2 eggs

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

    Make the Crust:

      - In a medium mixing bowl, combine graham cracker crumbs, melted butter, brown sugar, and salt.

        - Mix until well combined and the mixture resembles wet sand.

          - Press the crust mixture firmly into the bottom of the prepared baking pan.

            - Bake for 10 minutes and then remove from the oven to cool slightly.

              Prepare the Cheesecake Layer:

                - In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until smooth and creamy.

                  - Add in the maple syrup and vanilla extract and mix again until fully incorporated.

                    - Add eggs one at a time, mixing gently after each addition until just combined (do not overmix).

                      - Pour the cheesecake mixture over the cooled crust, spreading it evenly.

                        - Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

                          - Remove from the oven and let it cool on the counter while preparing the pecan topping.

                            Make the Pecan Pie Topping:

                              - In a medium bowl, combine the chopped pecans, corn syrup, maple syrup, brown sugar, melted butter, eggs, vanilla extract, and salt. Stir well until everything is fully mixed.

                                - Pour the pecan mixture over the baked cheesecake layer, spreading it evenly with a spatula.

                                  Final Bake:

                                    - Return the pan to the oven and bake for an additional 20-25 minutes until the topping is set and bubbly.

                                      - Once done, remove from the oven and let it cool at room temperature for at least 1 hour, then refrigerate for at least 2 more hours to set completely.

                                        Serve:

                                          - Once chilled, lift the cheesecake bars out of the pan using the parchment overhang.

                                            - Cut into squares or bars and enjoy!
