Ingredients

4 (6-ounce) salmon fillets, skin-on

2 tablespoons olive oil

2 lemons (1 sliced into rounds, 1 juiced)

3 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dill, parsley, thyme, salt, and pepper to create a marinade.

Marinate the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Pour the marinade over the fillets, ensuring they are well-coated. Let them marinate for at least 15 minutes at room temperature.

Arrange the Lemon Slices: After marinating, arrange the lemon slices on top of the salmon fillets.

Roast the Salmon: Place the baking sheet in the preheated oven and roast for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

Serve: Remove from the oven and let the salmon rest for a couple of minutes. Serve it with fresh lemon wedges on the side for an extra burst of citrus.
