Lemon Herb Grilled Salmon with Veggies

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

Zest and juice of 1 large lemon

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon fresh rosemary, chopped

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 red bell pepper, sliced

1 zucchini, sliced

1 yellow squash, sliced

1 tablespoon balsamic vinegar

Fresh lemon wedges for serving

Marinate the Salmon: In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dill, parsley, rosemary, salt, and pepper. Place the salmon fillets in a shallow dish or a resealable plastic bag and pour the marinade over them. Let them marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Veggies: While the salmon marinates, preheat your grill to medium-high. In a separate bowl, combine the cherry tomatoes, red bell pepper, zucchini, and yellow squash. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper. Toss until the veggies are well-coated.
