4 (6 oz) salmon fillets, skin-on

2 tablespoons olive oil

Zest and juice of 1 large lemon

2 garlic cloves, minced

2 teaspoons fresh dill, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

Salt and pepper to taste

For the Veggies:

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced into rounds

1 red onion, cut into wedges

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon balsamic vinegar (optional)

Marinate the Salmon: In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dill, parsley, oregano, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure each fillet is well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
