Lemon Herb Grilled Chicken with Asparagus

4 boneless, skinless chicken breasts

1 bunch of fresh asparagus, trimmed

Juice of 2 large lemons

Zest of 1 lemon

1/4 cup of olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Optional: lemon wedges for serving

Marinate the Chicken: In a bowl, mix the lemon juice, lemon zest, olive oil, minced garlic, rosemary, thyme, parsley, salt, and pepper. Add the chicken breasts to the marinade and ensure they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for extra flavor).

    Prepare Asparagus: In a separate bowl, drizzle the trimmed asparagus with a bit of olive oil, salt, and pepper. Toss to coat evenly.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

        Grill Chicken: Remove the chicken from the marinade, shaking off excess, and place them on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken has beautiful grill marks.
