1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 medium onion (diced)

2 cloves garlic (minced)

1 cup frozen peas and carrots mix

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon dried thyme

Salt and pepper to taste

Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken pieces, season with salt, pepper, and paprika, and cook until browned, about 5-7 minutes. Remove chicken from the skillet and set aside.

    Cook Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
