2 cups cooked shredded chicken breast (about 2 medium chicken breasts)

1 cup plain Greek yogurt (full-fat or low-fat based on preference)

1/4 cup mayonnaise (optional for creaminess)

1/2 cup diced celery

1/2 cup diced red grapes or apples

1/4 cup chopped walnuts or almonds (for crunch)

1/4 cup diced red onion

1 tablespoon Dijon mustard

2 tablespoons fresh dill or parsley, chopped

Juice of 1 lemon

Salt and pepper, to taste

4 large lettuce leaves (romaine or butter lettuce works well)

Whole grain or spinach wraps (4 large)

Instructions
 

Prepare Chicken: If not using pre-cooked chicken, poach or grill chicken breasts until fully cooked. Allow cooling before shredding.

    Mix Dressing: In a large mixing bowl, combine Greek yogurt, mayonnaise (if using), Dijon mustard, lemon juice, and fresh herbs. Mix well until smooth and creamy.

      Combine Ingredients: Add shredded chicken, diced celery, grapes (or apples), red onion, and chopped nuts to the dressing. Gently fold everything together until well coated.

        Season: Taste the chicken salad and season with salt and pepper to suit your preferences.

          Assemble Wraps: Lay out a whole grain or spinach wrap. Place a large lettuce leaf on the wrap, and scoop a generous portion of the chicken salad mixture onto the lettuce.

            Roll It Up: Fold the sides of the wrap inward and then roll it up tightly from the bottom to the top. Slice in half if desired. Repeat with remaining wraps and filling.
