Herb Butter Roasted Turkey Breast

1 (4-5 lb) boneless turkey breast, thawed

1 cup unsalted butter, softened

4 cloves garlic, minced

2 tbsp fresh rosemary, chopped

2 tbsp fresh thyme, chopped

2 tbsp fresh sage, chopped

1 tbsp lemon zest

1 tbsp salt

1 tsp black pepper

1 cup chicken broth

1 medium onion, quartered

2 carrots, chopped into large pieces

2 celery stalks, chopped into large pieces

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Herb Butter: In a bowl, combine the softened butter, minced garlic, rosemary, thyme, sage, lemon zest, salt, and pepper. Mix well until all ingredients are fully incorporated.

      Prepare the Turkey: Pat the turkey breast dry using paper towels. Gently lift the skin of the turkey breast and spread about half of the herb butter mixture directly under the skin, ensuring it covers the meat evenly.

        Season the Outside: Rub the remaining herb butter generously over the exterior of the turkey breast.

          Arrange the Vegetables: In a large roasting pan, scatter the onion, carrots, and celery pieces to create a bed for the turkey. This will add flavor to the drippings as the turkey roasts.

            Add Broth: Pour the chicken broth into the bottom of the roasting pan. This will keep the turkey moist during roasting.

              Roast the Turkey: Place the turkey breast on top of the vegetables in the roasting pan. Transfer the pan to the preheated oven and roast for approximately 1.5 to 2 hours, or until the internal temperature of the turkey breast reaches 165°F (74°C). Baste the turkey every 30 minutes with the pan juices for extra flavor and moisture.
