Hearty Lentil and Vegetable Soup

Ingredients
  

1 cup green or brown lentils, rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, chopped

2 celery stalks, chopped

1 medium potato, diced

1 red bell pepper, chopped

1 zucchini, diced

1 can (14.5 oz) diced tomatoes, with juice

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper, to taste

2 cups fresh spinach or kale, chopped

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and sauté for an additional minute until fragrant.

      Add the chopped carrots, celery, and potato to the pot. Cook for about 5 minutes, stirring occasionally.

        Incorporate the red bell pepper and zucchini, and sauté for another 3-4 minutes until the vegetables start to soften.

          Pour in the diced tomatoes with their juice, followed by the rinsed lentils and vegetable broth. Stir well to combine.

            Season the mixture with thyme, basil, smoked paprika, and add the bay leaf. Bring the soup to a gentle boil.

              Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the lentils and vegetables are tender.

                During the last 5 minutes of cooking, add the chopped fresh spinach or kale to the soup, stirring until wilted.

                  Remove the bay leaf, season with salt and pepper to taste, and if desired, adjust with additional herbs or spices to your liking.

                    Serve the soup hot, garnished with chopped fresh parsley. Enjoy your hearty bowl of warmth!
