2 medium zucchinis

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese (optional)

Cooking oil (for frying)

Instructions
 

Prepare the Zucchini: Wash the zucchinis and cut off the ends. Slice them into thin rounds, about 1/4 inch thick. Place the slices on a clean kitchen towel or paper towels to absorb excess moisture. Let them sit for about 15 minutes.

    Set Up the Breading Station: In three separate bowls, set up your breading station.

      - In the first bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper.

        - In the second bowl, whisk the eggs until well beaten.

          - In the third bowl, mix the breadcrumbs with grated Parmesan cheese (if using).

            Bread the Zucchini Slices:

              - Take each zucchini slice and first dip it into the seasoned flour, ensuring it's fully coated. Shake off any excess flour.

                - Next, dip the floured slice into the beaten eggs, allowing any excess to drip off.

                  - Finally, coat the zucchini slice in the breadcrumb mixture, pressing gently to ensure it sticks well. Repeat with all zucchini slices.

                    Heat the Oil: In a large skillet, pour in enough cooking oil to cover the bottom of the pan (about ½ inch). Heat the oil over medium-high heat until it reaches 350°F (175°C), or until a breadcrumb dropped in sizzles and turns golden.

                      Fry the Zucchini Chips: Carefully place the breaded zucchini slices in the hot oil in a single layer, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side or until they turn golden brown and crispy. Use a slotted spoon to transfer the cooked chips to a plate lined with paper towels to drain excess oil.

                        Serve: Allow the zucchini chips to cool slightly, then serve them warm with your favorite dipping sauce, such as marinara, ranch, or garlic aioli. Enjoy your crispy snack!
