Easy Chicken Fajita Quesadillas for Families

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 medium onion, thinly sliced

1 bell pepper (red, yellow, or green), thinly sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

4 large flour tortillas

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Optional toppings: sour cream, guacamole, salsa, fresh cilantro

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken strips and cook for about 5-7 minutes, or until they are golden and no longer pink in the center.

    Add Veggies: Add the sliced onion and bell pepper to the skillet. Cook for an additional 3-4 minutes, stirring often, until the vegetables are tender.

      Season: Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another 1-2 minutes until everything is well-coated with spices and fragrant. Remove the skillet from heat.

        Assemble the Quesadillas: Take one tortilla and sprinkle ¼ of the shredded cheese over half of it. Layer ¼ of the chicken and vegetable mixture on top of the cheese, then sprinkle another ¼ of the cheese over the filling. Fold the tortilla in half to create a half-moon shape. Repeat with the remaining tortillas and filling.

          Cook the Quesadillas: Wipe out the skillet, then return it to medium heat. Cook each quesadilla for about 3-4 minutes on each side, or until golden brown and the cheese is melted. You may need to cook them in batches, depending on the size of your skillet.

            Serve: Remove the quesadillas from the skillet and let them cool for a minute before cutting them into wedges. Serve warm with optional toppings like sour cream, guacamole, salsa, and fresh cilantro.
