4 medium sweet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup milk

1/4 cup unsalted butter (melted)

1/4 cup brown sugar

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/2 cup mini marshmallows (optional)

1/4 cup chopped pecans (optional)

Instructions
 

Begin by preheating your oven to 375°F (190°C).

    Peel the sweet potatoes and chop them into sizable pieces. Place them in a large saucepan and cover with water. Bring to a boil and cook until the sweet potatoes are fork-tender, approximately 15-20 minutes.

      After cooking, drain the sweet potatoes and place them in a large mixing bowl.

        Mash the sweet potatoes until they reach a smooth consistency. A potato masher or hand mixer can be utilized for a creamier result.

          Incorporate the melted butter, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt into the mashed sweet potatoes. Mix thoroughly until well combined and smooth.

            Gently fold in 3/4 cup of the shredded cheddar cheese, reserving some for later use on top.

              Spoon the sweet potato mixture into a greased 9x13 inch baking dish, spreading it evenly.

                Top the sweet potato mixture with the remaining cheddar cheese. If desired, now is the time to add mini marshmallows and chopped pecans on top as well.

                  Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly with a slightly golden surface.

                    Take the casserole out of the oven and let it cool for a few minutes before serving while warm.
