Easy Beef and Bean Chili Recipe

Ingredients
  

1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juices

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon oregano

½ teaspoon salt (to taste)

½ teaspoon black pepper

1 can (8 oz) tomato sauce

1 cup beef broth (or water)

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro

Instructions
 

Prepare Ingredients: Begin by assembling all of your ingredients. Dice the onion and bell pepper, and mince the garlic.

    Cook the Beef: In a large pot or Dutch oven, over medium-high heat, add the ground beef. Cook until browned and no longer pink, breaking it apart with a spoon. Drain excess fat if necessary.

      Sauté Vegetables: Add the diced onion and bell pepper to the pot with the cooked beef. Sauté for about 3-4 minutes, until the vegetables are softened. Then, add the minced garlic and cook for another 1 minute until fragrant.

        Spice it Up: Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix well, allowing the spices to coat the meat and vegetables for about 1-2 minutes.

          Combine Ingredients: Add the drained kidney beans, black beans, diced tomatoes (with juices), tomato sauce, and beef broth to the pot. Stir everything until well combined.

            Simmer: Bring the chili to a boil. Once boiling, reduce the heat to low and let it simmer covered for about 20-30 minutes, stirring occasionally. This allows all the flavors to meld together.

              Taste and Adjust: After simmering, taste the chili. Adjust seasoning with additional salt, pepper, or spices as needed.
