2 large sweet potatoes, peeled and cubed

1 pound boneless, skinless chicken breasts

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup corn (fresh or canned)

1 black bean can, drained and rinsed

1 avocado, sliced

1/4 cup chopped fresh cilantro (optional)

Lime wedges for serving

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Roast the Sweet Potatoes:

        - In a large mixing bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper.

          - Spread the sweet potatoes on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until they are tender and slightly crispy, flipping halfway through.

            Cook the Chicken:

              - While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, and a drizzle of olive oil.

                - Heat a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).

                  - Once cooked, remove the chicken from the pan and let it rest for a few minutes. Then, slice the chicken into strips.

                    Combine with BBQ Sauce:

                      - In the same skillet, pour in the BBQ sauce. Add the sliced chicken and stir to coat evenly. Cook for an additional 2-3 minutes until heated through.

                        Assemble the Bowls:

                          - In a bowl, start with a base of roasted sweet potatoes, then layer on the BBQ chicken, corn, and black beans.

                            - Top with sliced avocado and sprinkle with fresh cilantro, if using.

                              - Serve with lime wedges on the side for an extra burst of flavor.
