1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (15 oz) diced tomatoes

1 can (8 oz) tomato sauce

2 cups beef broth

2 teaspoons paprika

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

2 cups elbow macaroni (uncooked)

1 cup shredded cheddar cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef until it's cooked through. Drain excess fat and transfer the beef to the crockpot.

    Sauté Vegetables: In the same skillet, add diced onions, garlic, and bell pepper. Cook for 3-4 minutes until the onions are translucent. Add to the crockpot.

      Combine Ingredients: Add the diced tomatoes, tomato sauce, beef broth, paprika, oregano, basil, salt, and black pepper to the crockpot. Stir well to combine all ingredients.

        Cook the Goulash: Cover the crockpot with the lid and set it to low heat for 6-8 hours or on high heat for 3-4 hours.

          Add Pasta: About 30 minutes before serving, stir in the uncooked elbow macaroni. If you're on high, you can add it right when you have 30 minutes left, or if on low, check in 30 minutes to an hour; adjust any remaining broth if needed to ensure pasta cooks properly.

            Serve: Once the pasta is cooked and tender, serve the goulash in bowls. Top each serving with shredded cheddar cheese and a sprinkle of fresh parsley for added flavor and color.
