1 pound white fish fillets (such as cod, haddock, or tilapia)

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

Cooking spray or olive oil

Optional: tartar sauce or your favorite dipping sauce for serving

Prepare the Fish: Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fillets into sticks about 1 inch wide and 4 inches long.

    Set Up Breading Stations: In three separate shallow dishes, place the flour in the first dish, beat the eggs in the second dish, and combine the panko breadcrumbs, garlic powder, paprika, salt, and pepper in the third dish.

      Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray or brush it with olive oil to prevent sticking.

        Coat the Fish Sticks: First, dip each fish stick into the flour, ensuring it's coated evenly. Shake off any excess flour, then dip it into the beaten eggs, allowing the excess to drip off. Finally, roll the fish in the panko breadcrumb mixture, ensuring it's fully coated and gently pressing to adhere the crumbs.
