1 lb fresh shrimp, peeled and deveined

1 cup coleslaw mix (cabbage and carrots)

1/2 cup green onions, chopped

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp sesame oil

1 tsp rice vinegar

1/2 tsp salt

1/4 tsp black pepper

1 package egg roll wrappers (usually 20 wrappers)

Cooking spray or oil for brushing

Sweet chili sauce (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Shrimp Filling:

      - In a medium bowl, chop the peeled and deveined shrimp into small pieces (about 1/2-inch size).

        - Add the coleslaw mix, chopped green onions, minced garlic, and grated ginger to the bowl.

          - In a small bowl, mix the soy sauce, sesame oil, rice vinegar, salt, and black pepper. Pour this mixture over the shrimp and vegetables, and gently toss everything together until well combined.

            Assemble the Egg Rolls:

              - Take an egg roll wrapper and place it on a clean, flat surface so that a corner is pointing toward you (like a diamond shape).

                - Place about 2 tablespoons of the shrimp filling in the center of the wrapper.

                  - Fold the bottom corner over the filling, then fold in the two side corners, and finally roll up from the bottom to the top to seal the egg roll. Use a bit of water on the edges to help seal it if necessary. Repeat with remaining wrappers and filling.

                    Bake the Egg Rolls:

                      - Place the assembled egg rolls seam-side down on the prepared baking sheet.

                        - Spray or brush the top of each egg roll lightly with cooking spray or oil.

                          - Bake in the preheated oven for about 15-20 minutes, or until the egg rolls are golden brown and crispy, flipping them halfway through for even browning.

                            Serve:

                              - Remove the egg rolls from the oven and allow them to cool slightly before serving.

                                - Serve warm with sweet chili sauce for dipping.
